We all love a delicious dessert now and then, and some of us love it even more. When it comes to that, what’s better than Felix’s brownie recipe? With simple ingredients and clear instructions, your treat will be done in under half an hour!
That said, you might be confused about the ‘Felix’ part of it. We were too. It turns out that Felix is a huge part of the successful Korean pop group ‘Stray Kids,’ and lucky for us all, he is bigger than his music. He is also a foodie, just like the rest of us. We were all amazed to hear about Felix’s brownie recipe and it turns out it couldn’t be further away from disappointment. Let’s take a look.

Ingredients
Bowl 1
- Vanilla extract — ½ tsp.
- Espresso — 1 tsp.
- Eggs — 2
- Granulated sugar — ⅔ cup
- Brown sugar — ⅔ cup
- Cocoa powder — 2 tbsp.
- Melted butter — ½ cup
Bowl 2
- All-purpose flour — ⅔ cup
- Bread flour — 2½ tbsp.
- Baking powder — ½ tsp.
- Salt — a pinch
Instructions
- Set your oven to 180 degrees and line a baking sheet.
- Combine the ingredients for Bowl 1.
- Mix well.
- In another mixing bowl, combine the ingredients for Bowl 2.
- Mix until smooth.
- Combine the two bowls.
- Place the mixture on the baking sheet and transfer to the oven.
- Bake for half an hour.
Substitutions
- Granulated sugar — While Felix’s brownie recipe calls for granulated sugar to sweeten things up a bit, it’s not irreplaceable. While you can skip this one entirely for a fitter, lighter brownie, you can also replace granulated sugar with maple syrup, or maybe even honey. We have tried both, and we were left satisfied with the results. Artificial ones like zero-sugar sweeteners will also do, though you will notice the lack of flavor.
- Cocoa powder — Cocoa powder should be easy to replace. We opted for chocolate chips instead, and our brownie was just as delicious, if not even better. Semi-sweet ones will work just perfectly.
- Vanilla extract — Felix’s brownie recipe wouldn’t be the huge deal it is right now if it wasn’t for the secret ingredient that is vanilla extract. Still, you could replace it with vanilla paste, vanilla powder, or vanilla sugar instead.
Variations
- Explosive — Although Felix’s brownie recipe is a shiny one, you can always make it with more flair. Nutella would be a great addition to Felix’s brownies if you’re up for it, with every bite exploding in your mouth like a hot volcano. The same goes for peanut butter too!
- Sweeter — M&M’s are another fun choice, and they are even more colorful! Add your favorite M&M’s to the mix, and you’ll see how they work just like chocolate chips! And if M&M’s are not your cup of tea, try using your favorite chocolate bar or candy.
- Colorful — Felix’s brownie recipe is already loaded with flair and flavor, but maybe you need to add a bit more to the mix. Why not add some fresh berries? Strawberries and raspberries are always great, so we opted for those as well. Simply slice some and put them into the batter before baking the brownies.

Storage
- Wrap each brownie individually before transferring the leftovers to an airtight container.
- You can safely store the leftovers at room temperature for two days.
- Refrigerating the leftover brownies is another option. They will last for two days before going stale.
Pro Tips
- The baking — Although Felix’s brownie recipe states that you should be baking the brownies for a good half an hour, a good way to make sure that the time is up is by looking at the color, which should be golden brown. You can also insert a toothpick in the middle. The less it crumbles, the better.
- The chocolate — We have made it clear in the substitutions section that you can use chocolate chips and cocoa powder interchangeably. Keep in mind that, regardless of the one you have opted for, it’s always better to go for the darker one. Dark chocolate and dark cocoa powder will both make your brownies savory and more flavorful.
